Today we celebrate freedom
thanks to those who came before.
Those brave folks who cut and dried
and cared for each and every boar.
Freedom always comes at a price,
and while we all celebrate,
we should tip our hats to the heroes
who made ham in our country great!
La Quercia means “the Oak”, so it’s no surprise La Quercia has had a home in Oakland for the better part of the last decade. For Ham Independence, we want to show off the parallel between us and La Quercia—we’re both rooted in traditional ideas but you don’t have to hoof it to Italy to get the best. Our staff loved hamming it up for the cameras because we love our annual sale of 17.76% off all La Quercia products. Come down and see our crew in action, and don’t be bashful about telling them they look great while doing it!
Where do we start??? What is not to love about La Quercia and their amazing products! We at Wedge appreciate Artisan Cheese and Meats and we thrive on teaching our customers just what makes these products so darn tasty! Wedge knows what it means to have such a love for Charcuterie and we pass that on to our customers and they fall in love with it just as much as we do. You don't have to travel to Europe for amazing Meats....you can get them from Iowa...well your Cheese Shop who gets it from Iowa. Wedge Loves La Quercia and We are all about Ham Independence! IN PORK WE TRUST!
Here in downtown Los Angeles, you've got to be down for La Quercia, homie. It's who we rep and it's who are; cured, dependable, consistent. That's the American way: stay up, stay independent, stay salty, dawg. Just like La Quercia. We backin' La Quercia por vida loca, essay!
We love ham, we are always in the pursuit of quality Prosciutto, we love the the freedom of free range pork products. We Support Ham Independence, we love it and want to shout it from the Mountains, Luckily we have plenty of them around us!
"Keep, ancient hams, your storied pomp!" cries she
With silent lips. "Give us your Tamworth, your Speck,
Your hungry masses yearning to EAT REAL,
These delicious offerings of our native shore.
Send these, the ‘Nduja, Berkshire Cross to me,
I lift my lamp beside the golden boar!"
We LOVE La Quercia! When we first met Herb & Kathy and saw prosciutto from Iowa we thought what the heck?! But after the first taste we were believers, liberated & elated. Each year since we've proclaimed and celebrated Ham Independence!
We take great pride in bringing amazing, quality charcuterie to Walla Walla, WA. And, we think ham is AMAZING in all forms. Let's put Walla Walla on the map, peeps ~ and show them how much we LOVE the good stuff here in our fabulous community!
This summer strange phenomena surface around the globe. The skies ignite. Nonartisanal food races through the world's major cities. As these extraordinary events unfold, it becomes increasingly clear that a force of incredible magnitude has arrived; its mission: total bland tastelessness over the Fourth of July weekend. The last hope to stop the destruction is an unlikely group of Cheesemongers united by fate, La Querica and the proscuitto of happiness. Welcome to "Ham Independence Day"
The Prince of Prosciutto himself, Herb Eckhouse joins Zingerman’s Deli in declaring Ham Independence! La Quercia Handcrafted Cured Meats make the most succulent pork products this country has to offer. One taste of their fine offerings that rival the greats from abroad and it won’t be long before you’re claiming your own Ham Independence!
“Five score and one months ago Herb and Kathy Eckhouse brought forth on this continent a new Prosciuttificio, conceived in liberty, and dedicated to the proposition that all hogs are created equal.
Now we are engaged in a great struggle, testing whether their prosciutto, or any American prosciutto so conceived and so dedicated, can long endure in a world of Spanish and Italian hams. We are met on a great battlefield of that struggle: the charcuterie case of your local cheese shop. We have come to dedicate a portion of that case as a monument to those American hams. It is altogether fitting and proper that we should do this.
But, in a larger sense, we cannot dedicate, we cannot consecrate, we cannot hallow this case. The brave hogs who fill this case, whose hams we here enjoy, have consecrated it, far above our poor power to add or detract. The world will little note, nor long remember what we say here, but it can never forget what beautiful and complex flavors these American hams exhibit. It is for us the lovers of American hams, rather, to be dedicated here to the unfinished work which they who have cured these meats have thus far so nobly advanced. It is rather for us to be here dedicated to the great task remaining before us- that this nation shall have a new birth of freedom, and that the patrons of this cheese shop shall enjoy the rights of Life, Liberty, and the Prosciutto of happiness.”
-Cheesemonger Bradley, June 2013
Four score and ham years ago, well, we weren't born yet, but America has always been about taking something old and refining it, making it new again. We stand by the quality and consistency of La Quercia, and hope it's around for many score years to come.
At Sickles Market, we can't get enough of versatile prosciutto! We are using it every way we can this summer. Wrapped around Jersey Asparagus, nestled around a fresh ball of warm mozzarella, or stacked high on our Sandwich of the Month with peppery arugula and olive oil. We freed the pigs from our Butcher Department so they could escape to cheese so we never run out of prosciutto.
