We declare our ham independence to honor not only La Quercia, fine purveyor of porcine goodness, but the farmers who put in long, hard days to raise beautiful animals that nourish us. We are privileged to live in a land of such bounty (yes, Arkansas!)and we give thanks for the ability to feed folks real food every day. So here's to our farmers for making it all possible! Without them, there would be no ham, no independence, and certainly no H.A.M.
Us "Wedgies" here at Wedge believe we can have great artisan cheeses and charcuterie here in the good ol' USA! We are lovers of all pig parts... and think La Quercia products are exceptional every time! Go Pig!

We love America and we love our friends that cure pork. It's silly that being such a grand country we are still the little guy when it comes to ham. Whether it's an amazing cured leg of pork from Iowa or some tasty smoked and cured pork from the hills in the south, we should all be celebrating the fact that America has some truly amazing pork products that rival the rest of the worlds offerings.

Now we are engaged in a great struggle, testing whether their prosciutto, or any American prosciutto so conceived and so dedicated, can long endure in a world of Spanish and Italian hams. We are met on a great battlefield of that struggle: the charcuterie case of your local cheese shop. We have come to dedicate a portion of that case as a monument to those American hams. It is altogether fitting and proper that we should do this.
But, in a larger sense, we cannot dedicate, we cannot consecrate, we cannot hallow this case. The brave hogs who fill this case, whose hams we here enjoy, have consecrated it, far above our poor power to add or detract. The world will little note, nor long remember what we say here, but it can never forget what beautiful and complex flavors these American hams exhibit. It is for us the lovers of American hams, rather, to be dedicated here to the unfinished work which they who have cured these meats have thus far so nobly advanced. Life, Limburger and the Prosciutto of happiness? But of course! Through trusted partners like La Quercia, our cheeselovers have gotten a greater appreciation for delicious ham that's sustainably produced....in the good ol' US of A. Thanks to Herb, Kathy and their hard-working ham-loving team, prosciutto has come a long way in this country, and we can hardly wait to see what's next.
We believe American's have truly grasped the art of charcuterie and curing. Being a small local butcher shop we feel our products should come from the best and if you can get the best right here from small local producers then that's what we do.
